You did the extra work before you priced it
The customer asks for something while you are on site. You do it, because saying no mid-job is awkward and it will only take an hour. Then it takes three, it was never quoted, and by invoice day nobody remembers what was agreed. The sheet asks two questions on every job: what the variations cost you, and what you actually billed for them.

The margin looks right and the bank does not
A job can hit its quoted margin exactly and still lose money, because the quoted work was priced properly and the extra work was not priced at all. Across the eight worked jobs £4,850 of variations were done and never charged, which is nineteen per cent of the profit made on the lot.
