The convention, stated
Labour percentage is the full labour cost, employer NIC and pension included, over sales EXCLUDING VAT. Measured against till takings it flatters itself by a sixth, which is how a 32 per cent week gets reported as 27 and nobody worries.
The percentage steers, the pounds decide: a point of labour on the demo week is £10,209 a year. Two points is a part-time wage.
