How to read the number
Contribution per cover is the ex-VAT spend times the blended GP: on the demo, £21.85 of every £38 head stays after the food and drink are paid for.
Everything up to the break-even cover pays the nut; the profit is every cover after it. On the demo the week's profit is the last 110 covers, which is why a quiet Tuesday matters more than it feels.
The lever order: fill covers first, then GP, then the rota. Cutting the rota below the service standard cuts covers next quarter, which moves the break-even the wrong way.
